All Hydronix microwave probes function on the principle of measuring the absorption of microwaves in the examined material. The probe emits beam of microwaves, several dozen times weaker than the one sent by an ordinary mobile phone, to the examined material. The beam penetrates it to a depth of 50 to100mm, and then the power absorption is measured. Hydronix probes are able to measure 25 times per second, giving an average or instantaneous value of the moisture. The probe is unable to measure the moisture from frozen.
